Tumbet - Majorcan Tomato Salad

A Majorcan classic salad served hot or cold, cooked and presented in layers. Serve with or without the boiled eggs makes a really good side dish or vegetarian main course.

Preparation time: 20 minutes   Quantity: Serves 4   Cooking time: 30-40 minutes

Ingredients

5 tablespoons olive oil
450g/1lb. potatoes
1 large aubergine
2 green peppers
4 plum tomatoes
2 eggs (optional) - boiled
seasoning

Method

  • Peel, half and slice the potatoes
  • Fry in 1 tablespoon oil till golden
  • Place in a ovenproof dish
  • Meanwhile peel, half and slice the aubergines
  • Add another 1 tablespoon oil to the pan and fry till golden
  • Place on top of the potatoes
  • Meanwhile deseed and slice the peppers
  • Add 1 tablespoon oil to the pan, fry of the peppers
  • Place on top of the aubergines
  • Meanwhile peel and finely chop the tomatoes
  • Fry these in 2 tablespoon oil for 1-2 minutes
  • Pour on top of the peppers
  • Bake in a preheated oven gas 4/180*c/350*f for 20 minutes
  • Serve with halved boiled eggs
