Tumbet - Majorcan Tomato Salad
A Majorcan classic salad served hot or cold, cooked and presented in layers. Serve with or without the boiled eggs makes a really good side dish or vegetarian main course.
Preparation time: 20 minutes Quantity: Serves 4 Cooking time: 30-40 minutes
Ingredients
5 tablespoons olive oil
450g/1lb. potatoes
1 large aubergine
2 green peppers
4 plum tomatoes
2 eggs (optional) - boiled

Method
- Peel, half and slice the potatoes
- Fry in 1 tablespoon oil till golden
- Place in a ovenproof dish
- Meanwhile peel, half and slice the aubergines
- Add another 1 tablespoon oil to the pan and fry till golden
- Place on top of the potatoes
- Meanwhile deseed and slice the peppers
- Add 1 tablespoon oil to the pan, fry of the peppers
- Place on top of the aubergines
- Meanwhile peel and finely chop the tomatoes
- Fry these in 2 tablespoon oil for 1-2 minutes
- Pour on top of the peppers
- Bake in a preheated oven gas 4/180*c/350*f for 20 minutes
- Serve with halved boiled eggs
