Sopa Balear - Spanish Balearic Soup

A Spanish soup, using the local sausage of the Balearic islands the Sobrasado, a soft pork, slightly spicy sausage.

Preparation time: 10-15 minutes   Quantity: Serves 4   Cooking time: 30-40 minutes

Ingredients

2 tablespoon olive oil
1 onion
2-3 cloves garlic
200g/ 8 oz green cabbage
150g/ 5 oz potatoes
1 stick celery
1 green or yellow pepper
1 pint/550 ml chicken stock
60g/ 2 oz spicy sausage (chorizo or sobrasado)

Method

  • Separately dice all the prepared vegetables and sausage
  • Heat the oil and cook of the garlic till soft with out colour
  • Add the garlic, cook for a minute on low
  • Add all the other vegetables, cook for a couple of minutes
  • Pour on the stock-bring to the boil
  • Simmer for 20-30 minutes, till all the vegetables are tender
  • Liquidize -till smooth
  • Serve with the chopped sausage sprinkled on top
