Preparation time: 20 minutes   Quantity: Makes 8-10 portions   Cooking time: 50 minutes

Ingredients

240g/ 8 oz self raising flour
120g/ 4 oz-cooking fat
120g/ 4 oz caster sugar
I large egg
180g/ 6 oz currants
5 tablespoons milk

Method

  • Sift the flour, rub in the fat and add the sugar
  • Beat in the egg and add the currants
  • Stir in the milk
  • Spoon in to a 6 –7 inch tin
  • Cook in a preheated oven at gas 4 for approx 50 minutes
