Stuffed Mushrooms
Perfect for a Vegetarian main course - mushrooms are robust in texture and the filling flavoursome. Try serving with a tomato salsa and a herby salad.
Make your own breadcrumbs by processing stale bread and reserve excess in the freezer till needed.
Preparation time: 15 minutes Quantity: Serves 4 starter or 2 as a main Cooking time: 30 minutes
Ingredients
4 open cup large field mushrooms
For the stuffing mix
1/4 red pepper -finely diced
1 stalk celery -finely diced
2 cloves garlic -crushed
1/4 onion -finely diced
spices and fresh herbs (optional)
60g/2 oz breadcrumbs
1 medium egg
60g/ 2 oz grated cheese
Method
- Sauté stuffing mix ingredients for a few minutes until soft, you could add spices and herbs
- Cool the mixture then add the breadcrumbs and egg
- Season well and spoon equal quantities on to the mushrooms in an ovenproof dish
- Top with cheese
- Bake in a medium oven for 30 minutes
