Lemon Chicken
A quick, easy and tasty fresh dish to serve with steamed vegetables or some sautéed mange tout. For an even quicker version cut the chicken in to strips and cook in the pan after the onions have softened - this dish will cook in approx. 15 minutes.
Preparation time: 5 minutes Quantity: Serves 1 Cooking time: 15 - 20 minutes
Ingredients
1 teaspoon olive oil
1 chicken breasts - de-skinned and stripped
1/2 onion - finely chopped
1 clove garlic - crushed
30g / 1 oz butter - soft diced
1 lemon - zest and juice
few twists black pepper
Method
- In a pan add a small knob of the butter and the oil and cook of the onions to soften without colour
- Add the chicken, garlic and cook till the chicken changes colour
- Then add the juice
- Reduce down to half the mix (boil till the mix evaporates and decreases in volume)
- Add small knobs of butter, cooking all the time and stirring until the butter dissolves in to the juice mix
- Repeat until all the butter has gone and the chicken cooked and the sauce thickened
- Serve
Tip - for added flavour add 1 teaspoon chopped lemon grass to the garlic
