Veal or Pork Mexican
A simple one pot dish with a touch of spice and packed full of substance, all you need is a side dish of rice.
Preparation time: 10 minutes Quantity: Serves one Cooking time: 25 minutes
Ingredients
1/2 tablespoon olive oil
1/2 small red onion - small diced
1 clove garlic - thinly sliced
1/3 red pepper - small diced
1 stick celery - de-stringed, small diced
1/2 teaspoon paprika
1 veal fillet or trimmed pork chop or a 5 oz piece of pork fillet
30g / 1 oz sweetcorn
1 large tomato - chopped
1 tablespoon tomato puree
1/2 tablespoon chilli sauce (or 1/4 red finely chopped chilli and 1 tablespoon wine or water)

Method
- Heat the oil
- Add the onion and fry to soften without colour
- Add the garlic, pepper and celery
- Stir for a minute and add the paprika
- Move the ingredients to the side, turn up the heat and place the meat in the middle, cook to seal and brown each side approx. 2 minutes each side
- Add everything else and a splash of water to form a sauce
- Simmer gently for a few minutes before turning the meat and cooking till cooked and firm to the touch - if the sauce evaporates too much add a splash more water
- Season to taste and serve with rice
