Stuffed Baby Squid - Tapas

If you have whole squid, pull out the tentacles and head, wash and remove black skin from the outside of the tube and pull out the membrane inside (the back bone). Cut the head off from the tentacles and wash - marinate the tentacles and cook separately –they will B.B.Q or grill in 2-3 minutes

Preparation time: 15 - 20 minutes   Quantity: Serves one   Cooking time: 8 - 10 minutes

Ingredients

2 - 3 baby squid tubes per portion

Stuffing - Multiply as needed
45g / 1&1/2 oz bread crumbs
20g / 2/3 oz grated cheese
1/4 finely chopped onion
1/6 pepper finely chopped
1 teaspoon fresh mixed herbs
1 egg yolk
1/2 level teaspoon smoked paprika
seasoning

Method

  • Clean 2-3 baby squid tubes per portion, making sure the “see through” membrane is removed from inside the tube, pull of any outer loose black skin
  • Mix all the ingredients for the stuffing together

Stuff in to the squid tubes

  • B.B.Q the squid tubes for approx. 10 minutes turning on 4 sides
  • If the B.B.Q is to hot you can cook the squid in foil, beware not to overcook
  • Or grill for 6 -8 minutes turning as they cooks
