Chicken in Peanut Sauce

A full flavoured dish cooked in less than 20 minutes and so adaptable, use Turkey, Vegetables or Pork instead of chicken or dice the chicken for a dish cooked in less than 15 minutes.

Preparation time: 10 minutes   Quantity: Serves one   Cooking time: 20 minutes

Ingredients

Marinade
1/2 onion - grated (optional)
1 clove garlic - crushed
pinch dried thyme or double fresh
1 heaped teaspoon curry powder
( or 1/2 teaspoon each of ground cumin, coriander and turmeric)
1/4 fresh lemon juice
1/4 teaspoon chilli powder or same in tobasco

All Else -
1 teaspoon oil
1 chicken breast - skinned
1 level tablespoon peanut butter
150 ml boiling water
2 plum tomatoes - skinned (optional) and diced
1 teaspoon fresh coriander - chopped
seasoning

Method

  • Mix all the ingredients for the marinade together
  • Soak the chicken in to the marinade and leave for 20 minutes or overnight
  • Heat up the oil in a frying pan
  • Scrap the marinade of the chicken and seal in the hot oil for 2 - 3 minute on each side
  • Add all the marinading mix and cook on a low heat for a minute
  • Meanwhile mix the peanut butter with the water and tomatoes
  • Add to the chicken and cook for a few minutes on each side until the chicken is cooked
  • Add a little more water if too dry
  • Stir in the coriander
  • Season to taste
