Cooking in Foil - Asparagus, Potato and Corn
As the French say “en Papiette” -cooking in a bag. But the thing is it’s just so simple, tasty, quick and visually impressive plus the added bonus of - it saves on the washing up.
Preparation time: 5 minutes Quantity: Fill 1 bag per portion Cooking time: 20-25 minutes
Ingredients
for each Foil wrap per portion -
1 square of tin foil
1 square of greaseproof
1 teaspoon olive oil
1 teaspoon alcohol, wine, juice, water or stock etc.
1 clove crushed garlic
1 squeeze citrus juice
4 trimmed asparagus
1/4 red onion - sliced
3 cooked new potatoes - sliced
4 - 5 baby corn
1 sprig of dill (op)

Method
- Place a square of foil and a square of greaseproof paper down on a bench, fill with the vegetables and par boiled potatoes and the rest of the ingredients
- Fold over sides like a Cornish pasty – leaving room for the vegetables to steam
- Cook in a preheated oven gas 6 -7 / 210*c / 420*f on the top shelf for 20 - 25 minutes
- Serve in the foil
