Tostadas - Chicken and Coriander

Tostadas are tortillas (round flat breads) fried till crispy and topped with any choice toppings - hot or cold.

Preparation time: 10 minutes   Quantity: Serves 1-2   Cooking time: 15-20 minutes

Ingredients

2 flour tortillas
2-3 tablespoons oil
1/2 red onion -sliced
75g/ 3 oz sliced raw chicken
1/2 red pepper- sliced
1/4 fresh chilli - finely chopped (optional)
1 tablespoon fresh coriander -chopped
seasoning
30g / 1 oz cheese- grated

Method

  • Heat half the oil in a large frying pan
  • Fry of one tortilla at a time till light golden and crisp on both sides adding more oil if needed( alternatively deep fry till light brown or for a healthier version don’t fry at all)
  • In the same pan with a touch more oil fry of the onions till soft without colour
  • Add the chicken and stir fry till for a few minutes
  • Add the pepper and chilli
  • Cook for a few minutes more till the chicken is cooked
  • Mix in the coriander
  • Spoon the mix equally between the two crisp tortillas
  • Sprinkle on the cheese
  • Serve or bake in a medium oven until the cheese is melted (4-5 minutes)
