Szechwan Chicken with Mushrooms
Try using Raw king prawns instead 6-8 for a tasty portion. But only wok fry for a few minutes till pink and just cooked. Don’t worry if you do not have a wok, use a frying pan instead.
Preparation time: 20 minutes Quantity: Serves 1 Cooking time: 20-30 minutes
Ingredients
1 small chicken breasts
For the Marinade -
1 tablespoons dark soy sauce
3 Szechwan peppercorns - crushed
1 tablespoon red wine vinegar or lemon juice
Chilli sauce -
1 teaspoon cornflower
1/5 teaspoon fish sauce
1 tablespoons chilli sauce
2 teaspoons brown sugar and
70 ml water
All else -
1/2 tablespoon vegetable oil
6 button mushrooms -sliced
Method
- Cut the chicken in to strips- small finger size
- Mix all the marinade ingredients together
- Marinate the chicken for 20 minutes or so
- Make up the chilli sauce by
- Bringing all the ingredients to the boil and simmer until thickened
- Turn off and use when needed
- Wok fry in hot oil the meat and marinade stirring until nearly cooked
- Add the mushrooms
- Wok fry for a further 3-4 minutes until crisp but soft and the chicken cooked
- Pour in the chilli sauce stir for a minute and serve
