Battered Vegetables
Serve with one of CookeryClubs sauces and dips.
I love battered vegetables as a starter with sweet chilli sauce and a yogurt and mango dip.
Preparation time: 10 minutes Quantity: Serves 1 Cooking time: 8-12 minutes
Ingredients
75 g/ 3 oz + of assorted raw vegetables of choice
i.e. - cauliflower, broccoli, mushrooms, peppers, carrots, spring onions, onions and baby corn
Batter
60g/ 2 oz plain flour -sieved
1/4 tablespoons vinegar
1/4 teaspoon baking powder
salt and pepper
water to bind
Method
- Prepare the cleaned and peeled vegetables by cutting in to strips or florets
- whisk all ingredients for the batter together, with enough water to form a thick mix– the consistency of thick double cream
- Dip in to a batter and deep fry till crisp and golden
