Italian Tuscan Bean Salad

This traditional bean salad is fresh, nutritious, quick and makes a perfect lunch.

Preparation time: 10 minutes   Quantity: Serves 1  

Ingredients

1/2 x tin/ 100g cannelloni beans (washed)
(or use pre soaked dried beans-cooked till soft)
1 plum tomato -1/2 slices
1/2 inch cucumber -1/2 slices
1/4 red pepper- thinly sliced
1/4 tin tuna in oil or spring water
3 olives
1 tablespoons virgin olive oil
1/2 tablespoon fresh lemon juice
1/2 teaspoon chopped flat parsley
seasoning

Method

  • Simply arrange all the ingredients on a plate, sprinkle on the beans and gently crumble the tuna/flakes on top
  • Mix the oil, lemon, parsley and seasoning together and pour over the salad
