Thai Sweet and Sour Rice Noodle Salad

A quick and easy 10 minute light lunch

Preparation time: 5 minutes   Quantity: Serves 1   Cooking time: 15 minutes

Ingredients

60g/ 2 oz rice noodles
30 ml pineapple juice
1/2 teaspoon tamarind paste
l/2 lime juice
25-30 ml coconut milk
1/2 tablespoon red curry paste
1/2 teaspoon ginger- grated
1/2 tablespoon chopped coriander stalk and leaf
season

Method

  • Add everything, except the noodles and coriander to a saucepan and heat gently
  • Add the noodles and stir round for a few minutes till soft
  • Add the coriander- season to taste and serve
