B.B.Q Rack of Ribs
Preparation time: 15 minutes plus marinating time Quantity: Serves 1- 2 (around 10 ribs) Cooking time: 1&1/4 - 1&1/2 hours
Ingredients
1 Rack of Ribs
Marinade-
4 tablespoons tomato sauce/ketchup
2 tablespoons dark soy
1 tablespoons brown sugar
2 tablespoons honey
2 tablespoons red wine vinegar
2 cloves crushed garlic
1 tablespoon chopped fresh oregano( or 1/4 of dried)
1/4 red chilli diced (optional)
Method
- Mix the marinade ingredients together and rub in to the ribs -leave to marinade for minimum 20 minutes or over night
- Cook in a pre heated oven gas 7 - 8 / 210*c / 450*f covered with foil for 1-1/4 hours
- Remove foil
- Baste and cook for a further 20 minutes
