Blackened Sea Bass Fillet

You could replace the Sea bass with swordfish, shark, sole or even good old cod

Preparation time: 10 minutes   Quantity: Serves 2   Cooking time: 10 minutes

Ingredients

2 sea bass fillets or 1 whole sea bass filleted

Spice Mix -
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/6 teaspoon ground chilli powder
1/4 teaspoon celery salt
few twists black pepper
1/2 teaspoon plain flour

oil to pan-fry
30g / 1 oz butter (optional)

Method

  • Slit the skin of the fillet, width ways half a dozen times going through the skin and a touch of the flesh but not in to the fillet
  • Mix the spice mix ingredients together
  • Dip the fillet in to the spice mix front and back until well coated
  • Shake of excess
  • Leave for a few minutes to take on the spice flavour
  • Heat up a little oil in a frying pan, on a medium hot heat - when hot
  • Gently lay the fish skin side down away from you, to avoid any oil splashing on you
  • Don’t be tempted to move around, let the heat get to it
  • Flip over after 2 - 3 minutes and cook the other side for a couple of minutes till blackened or at least golden brown
  • Take out of the pan and plate
  • Add the butter to the pan and heat till the butter takes on the spicy bits left in the pan and turns golden brown
  • Spoon on to the fish and serve
