Cajun Spiced Whitebait

Good old fashioned whitebait with the added zing of Cajun spice. Whitebait’s a great food to get the children in to, it’s small, fun to pick up and great to crunch “little fishes” !!!
Left over Cajun spice can be used to coat fresh jacket wedges or dip in chicken breast, char grill and serve in a sarnie with avocado and crunchy leaves

Preparation time: 10 - 15 minutes   Quantity: Serves 4 as a starter   Cooking time: 3 - 4 minutes

Ingredients

Cajun Spice Mix –
1/2 teaspoon salt
1/2 teaspoon chilli powder
1 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
2 teaspoon ground coriander

6 tablespoons plain flour
300g/ 10 oz whitebait

Method

  • Mix the ingredients together for the Cajun spice mix
  • Make a Cajun flour mix by mixing 1 tablespoon Cajun spice mix with 6 tablespoons plain flour
  • Coat the whitebait in Cajun flour mix
  • Coat well and shake excess flour out in a sieve
  • Deep fry in hot oil till golden
  • Serve with a yogurt dip
