Kebab Samak / Fish Kebab

This one originates from Turkey.
You could use an assortment offish such as Turbot, Salmon, Tuna, Marlin, Snapper etc

Preparation time: 10-15 minutes   Quantity: Serves 1   Cooking time: 8 - 10 minutes

Ingredients

150g firm fresh fish diced chunky
1/4 lemon juice
1 tablespoon olive oil
1/4 grated onion
salt and pepper
1 bay leaf
1/4 teaspoon paprika

Method

  • Marinate for 1 hr in lemon juice, olive oil, onion, salt, pepper, bay leaf and paprika
  • When marinated skewer on to soaked kebab sticks
  • Grill or fry for 8/10 minutes
  • Variation for an Egyptian flavour add ½ tea spoon cumin
