Borrida de Rajada - Spanish Skate Baked with Potatoes
Preparation time: 20-30 minutes Quantity: Serves 4 Cooking time: 45 minutes
Ingredients
750g/1&1/2 lb skate
seasoning
1 lemon juice
2 tablespoon olive oil
2 large potatoes
1 medium onion
2 cloves garlic
60g/ 2 oz ground almonds
30g/ 1 oz breadcrumbs
1/2 teaspoon ground cinnamon
1 teaspoon chopped parsley
2 large egg yolks
2 tablespoon milk
pinch saffron
Method
- Cut the skate in to portions
- Marinate the skate in lemon and salt till needed
- Meanwhile peel and slice the potatoes 1cm thick
- Fry the potatoes in 1 tablespoon of oil till golden on both sides
- Place the fish in a 4 portioned ovenproof dish
- Cover with the potatoes
- Fry the onion -finely chopped and crushed garlic till soft, add the cinnamon, almonds, saffron, parsley and crumbs
- Take of the heat, mix in the milk, egg yolks
and season
- Spoon on to the potato dish
- Bake in a preheated oven gas 5/200*c/400*f for 25-35 minutes, till hot and bubbling
- Serve
