Prawn in a Creamy Coconut Sauce - Malai

This is the simplest curry, yet so tasty with its delicate creamy coconut taste. You can replace the prawns with king prawns or even mixed seafood's. For a truly extravagant Malai try scollops - but beware not to over cook.

Ingredients

1 bag cooked prawns 375g/1lb defrosted
3 tablespoons oil
1/2 inch grated ginger
1/2 teaspoon cornflower
1/2 teaspoon ground fenugreek
1/2 teaspoon chilli powder
1/2 teaspoon turmeric
1/2 teaspoon sugar
125g/4oz cream of coconut
1/2 pint of water
sprinkle of garam masala
slices of green chilli optional

Method

  • Place the oil in a pan fry grated ginger and cornflower then add the prawns and fenugreek, chilli powder, turmeric and sugar
  • Cook out for 1 minute then add cream of coconut and water
  • Bring to the boil, simmer for 4-5 minutes
  • Serve with a sprinkle of garam masala and slices of green chilli
