I always have a supply of Bread crumbs in my Freezer- they just shake out when need, so when ever I've got a glutton of bread I make up a batch. These Crab Cakes go well with a fruity Salsa and a simple dressed Salad.

Preparation time: 20 minutes   Quantity: Makes 4 main course -8 starters   Cooking time: 3 - 5 minutes

Ingredients

450g/1 lb. potatoes, boiled and mashed.
180-200g crab meat
1 red finely chopped chilli
2 teaspoons chopped chives
60g sweetcorn
1 lime zest
1 egg yolk
seasoning

Breadcruming -
100g/ 4 oz fresh bread crumbs
1 beaten egg & 2 teaspoons milk
2 tablespoons flour
oil for cooking.

Method

  • Bind all the filling together
  • With clean, damp hands mould in to cake shapes, 8 large for mains or 16 small for starters
  • Then bread-crumb :-
  • 1st ; dip in to sift seasoned flour
  • 2nd; beaten egg and milk
  • 3rd; crumbs
  • Fry in hot oil- till golden on both sides
