Cod with a Herb Crust

Fast food at it’s best, serve with some simple steamed vegetables for a healthy meal. We are recommended to eat 2 portions of fish a week. For a children’s version replace the herbs for grated cheese - mine love it.

Preparation time: 5- 10 minutes   Quantity: Serves 1   Cooking time: 12 minutes

Ingredients

1 piece / portion cod, skin on - approx. 6 - 8 oz / 150g - 200g
50g / 2 oz breadcrumbs
2 tablespoon fresh chopped herbs - see below
1 spring onion - finely chopped
1 egg yolk - small or 1/2 large
seasoning

Use soft herbs mixed or use just one, like - flat parsley, curly parsley, coriander, chives, tarragon or dill. (mint would be too over powering)

Method

  • Place the piece of cod on a baking sheet
  • Meanwhile mix all the ingredients together with a good shake of seasoning
  • Press the crust mix firmly on top of the fish
  • Bake for 12 minutes in a preheated oven gas 6 / 200*c / 400*f


Tip -
Fish should be cooked - just done so the flakes just break of - cook for a further 5 minutes if you like yours overcooked
