Haddock with a Cheese Crust

Ask the fish monger to cut you of the chunky end of the Haddock. We tend to use 6 oz / 150g per portion but for a larger portion make it 8 oz / 200g.

Preparation time: 5 - 10 minutes   Quantity: Serves 4   Cooking time: 12 minutes

Ingredients

4 portions of haddock approx. 6oz/150g per portion - skin on
140g / 5 oz breadcrumbs
2 tablespoon fresh chopped chives
1 onion - very finely chopped or grated
60g / 2 oz grated parmesan cheese
1 egg - any size
seasoning

Method

  • Place your haddock, evenly spread out on a baking sheet
  • Meanwhile mix all the ingredients together with a good shake of seasoning
  • Press the crust mix firmly on top of each fish
  • Bake for 12 minutes in a preheated oven gas 6 / 200*c / 400*f


Tip -
Fish should be cooked - just done so the flakes just break of - cook for a further 5 minutes if you like yours slightly overcooked.
