Rice and Easy Mackerel
A very easy nutritional meal, all these wonderful ingredients enhance the flavour of the mackerel. Try using different types of fish
Preparation time: 5 minutes Quantity: Serves 2 Cooking time: 15 minutes
Ingredients
325g fresh mackerel fillets
1 medium onion sliced thinly
2 cloves garlic - finely sliced
75g shiitake or closed-cap button mushrooms thinly sliced
25g butter
1 sprig corriander
1 sprig flat-leaf parsley
80ml white wine
1 dessert spoon soy sauce
1 slice of lemon
salt and pepper
Method
- Place the onion, garlic, mushrooms, butter, corriander and parsley in a pan and cook on a low heat for 10 minutes
- Add the white wine, bring to the boil and reduce by at least half
- Turn down the heat and add soy sauce and the lemon
- Place the fish on top and cover with a lid.
- Cook on a low heat for a maximum of five minutes; depending on the thickness of the fish fillets.
- Reduce the time on the hob and leave the pan off the heat with the lid on for a few minutes before serving
- Add salt and pepper if necessary.
- Serve with onion mix and the juices and a serving of Jasmine rice
