Sesame Toffee Bananas

Battered Bananas are great, but when you coat them in caramel and then roll them in sesame - you get a real textured treat. For more flavour serve with a simple vanilla ice-cream and a squeeze of golden syrup.

Preparation time: 20 minutes   Quantity: Serves 4   Cooking time: 10 minutes

Ingredients

4 bananas

Batter -
150g / 6 oz plain flour
1/2 teaspoon baking powder
1/2 teaspoon malt vinegar
1 teaspoon cornflower
cold icy water to mix
1 egg white

Caramel -
75g / 3 oz caster sugar

all else -
oil for frying
hand full of sesame seeds

Method

  • Cut the banana in to third chunky pieces
  • Meanwhile make up the batter by whisking the flour, cornflower with the baking powder and vinegar
  • Add enough cold icy water to make a thick batter the consistency of thick single cream
  • Whisk up the egg white till stiff and fold in gently
  • Make up a caramel by melting all the sugar

in a very clean pan, do not stir but cook to a caramel and take off immediately

  • The art is to fry the bananas when the caramel is half way done
  • Dip the banana pieces in the batter and deep fry until golden
  • Dip the bananas in the caramel (beware caramel very hot -use a fork or skewer)
  • Sprinkle or roll in sesame seeds
