Chinese Style Sausages Duck, Hoi Sin Sauce and Spring Onion
I’m addicted to the Duck and hoi sin combination, with pancakes, in a wrap, on top of a pizza or in these sausages- it’s just delicious.
Preparation time: 1 hour + Quantity: Makes 8 - 10 portions Cooking time: 10 - 15 minutes
Ingredients
1 tablespoons olive oil
1 teaspoon sesame oil
1 minced/ diced red onion
5 finely diced spring onions
1 clove crushed garlic
1 teaspoon grated ginger
400g minced duck
2 tablespoon Hoi Sin Sauce (or plum)
1 egg yolk
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper
Method
- Heat up the oils and cook the onions, ginger and garlic- gently, to soften with out colour
- Cool
- Add to the mince duck and mix in with your clean hands
- Add all else and leave to infuse the flavour for at least 20 minutes or overnight
- Stuff in to soaked sausage skins- see chocolate sausages for method
