Minced Pork Stir Fry in Lettuce leaves
The idea of this dish is that you serve the spiced pork in a big dish and you stuff a few spoonfuls in to a lettuce leaf, you wrap it over to make a parcel and eat. The lettuce adds a cool crunch to the soft lightly spiced pork filling. Try serving as a small pre-main after a mixed Chinese starter.

Ingredients
2 tablespoons of vegetable oil
1 finely diced white onion
1/2 red diced pepper
3 sliced spring onions
2 cloves finely diced garlic
1/2 inch chopped ginger or galengal (op)
1/2 red diced chilli
450 g / 1 lb. minced pork
4 tablespoons light soya sauce
1 tablespoon red wine vinegar or 1/2 lime juice
1/2 teaspoon fish sauce
1 iceberg lettuce - leaves pulled off whole
Method
- Heat your Wok until it is very hot
- Add the oil and heat until hot but not smoking
- Add the onions, peppers, spring onions, ginger, garlic and chilli
- Cook for a few minutes to soften but not brown, control the heat
- Add the minced pork and cook, stirring regally to break up and cook until brown
- Finish of by adding the soya, vinegar and fish sauce
- Season well to taste, pour in to a serving bowl and garnish with shredded spring onion and fresh chopped coriander.
- Serve with the lettuce leaves
