Beef with Cashews
Use a good cut of beef for this - like rump, sirloin or rib avoid cheaper cuts as they will cook up - tough.
Preparation time: 15 minutes Quantity: serves 4 Cooking time: 8 - 10 minutes
Ingredients
2 tablespoons oil or 1 tbls sesame oil & 1 of plain
1 onion – finely sliced
2 cm / 1 inch sliced ginger – skin on or off!
1/2 tablespoon dried red chilli – finely chopped
1 garlic clove – crushed
450 g / 1 lb. Good quality beef – sliced
2 – 3 kaffir lime leaves
few twists black pepper
1 tablespoon dark soya sauce
1 teaspoon light brown sugar (or any)
1 red pepper – thinly sliced
1 green pepper – thinly sliced
3 – 4 spring onions – sliced / stripped / long pieces
120g / 4 oz cashew nuts
Method
- Heat the oil in a wok or large frying pan
- Fry of the onion until soft
- Add the ginger, chilli and garlic and stir for less than a minute without browning
- Add the beef, turn up the heat and allow to brown with all the ingredients in the pan
- Add the lime leaves, pepper, soya, sugar and peppers
- Toss around for a few minutes to allow the flavours to mix and the peppers to soften
- Add the spring onions and cashews, toss for a further minute then
- Serve
