Sherry Clams with Spring Onions and Ginger

Clams are cooked in a similar way to mussels, only they require less time as their smaller. Bur are equally as versatile in taste.

Preparation time: 5 minutes   Quantity: Serves 3 - 4 as a starter   Cooking time: 5 - 6 minutes

Ingredients

450g / 1 lb. fresh shelled clams
60 ml sherry
2 cm grated ginger
3 spring onions
seasoning

Method

  • Wash the clams well
  • In a large saucepan bring the sherry to the boil, add the ginger and season
  • Add the clams and cover
  • Cook for 2 - 3 minutes, shaking occasionally until all the clams are open
  • Turn of the heat
  • Stir in the spring onions and cover with the lid for a further 2 minutes
  • Serve
