Poories - Indian Fried Flat Breads

A fantastic bread, great to slit open and fill the middle with your favourite home cooked currie. Allow 3 per portion. Cook the poories fresh, you can keep the rolled out dough covered for several hours until needed

Preparation time: 30 minutes approximately plus resting   Quantity: Makes approximately 12   Cooking time: 3 - 4 minutes

Ingredients

300g / 10 oz wholemeal flour
1/2 teaspoon salt
water to mix
oil to deep-fry

Method

  • Sift the flour and salt several times
  • Mix in enough water to make a soft dough ball, not too sticky and not dry
  • Knead for a few minutes
  • Rest (leave to one side) - covered with a damp cloth for 30 minutes or so
  • Divide in to 12 - 16 equal balls
  • Keeping them covered with a damp cloth, roll out one at a time on a floured surface
  • Meanwhile heat a deep fat fryer to its hottest setting
  • Fry of one or two at a time - agitating them with a metal spoon to encourage them to puff out
  • Cook until golden brown and puffed out
  • Drain on kitchen paper and repeat until all are cooked
  • Serve with curries and dhals
