Mixed Vegetable Pakoras

Make a load for a party served with a couple of dips, their cheap and filling and extremely tasty. They can be made in advance and reheated - but arn’t quite as good.

Preparation time: 10 minutes   Quantity: Makes 4 portions, approx. 12 pieces   Cooking time: 5-10 minutes

Ingredients

Batter -
125g/ 4 oz gram flour (chick pea flour)
2 tablespoon natural yoghurt
½ teaspoon chilli powder (optional)
salt and pepper
water to bind

Vegetables -
4-5 pieces per portion
aubergine half moons
courgette slices
onion rings
button mushroom halves

Method

  • Whisk the batter with enough water to make a thick batter
  • Dip in the vegetable slices
  • Deep fry in hot oil, cooking on both sides until golden brown
  • Can be shallow fried
