Pakoras - Spiced Indian Fritters

A really cheap spicy vegetable dish, serve warm at a party with a bowl full of riata or mango chutney.

Preparation time: 10-15 minutes   Quantity: Makes 4 portions - 12 pieces   Cooking time: 8-12 minutes

Ingredients

125g/ 4 oz gram flour (chick pea flour)
2 tablespoon natural yoghurt
½ teaspoon chilli powder optional

250g/1/2 lb vegetables such as chillies, courgettes, aubergines, par cooked potato slices, onions and peppers- mixed or singular vegetables

Method

  • Whisk the flour, yoghurt and chilli powder with water to form a thick batter and season.
  • Dip in vegetables chunks or pieces
  • Deep fry/ shallow fry in hot oil, cooking on both sides until golden brown
