Chicken Rogan Josh

I use individual spices but you can use a curry powder or paste instead.

Preparation time: 15 - 20 minutes plus marinating time   Quantity: Serves 4   Cooking time: 30 - 40 minutes

Ingredients

1 lb/ 500g diced chicken
150 –200g yoghurt
3 cloves crushed garlic
1 inch fresh grated ginger
1 teaspoon ground coriander
1 teaspoon ground cumin,
1 teaspoon ground black pepper
1 teaspoon chilli powder
1 teaspoon turmeric
1 teaspoon paprika

5 tablespoons oil
200g/ 8 oz grated onion
1 teaspoon sugar
1/2 teaspoon cinnamon
1 tablespoon malt vinegar
salt to taste
1/4 pint water
1 tin chopped tomatoes

Method

  • Put meat, yogurt, all spices in a bowl and marinate for 30 minutes
  • Fry the sugar of in the oil, add the onions and stir until brown
  • Add meat and marinade
  • Cook for 3 minutes
  • Add all else
  • Cook till meat is tender (approx 30 minutes)
  • Add more water if dry
