Potato Pakoras

These make great party snacks dipped in to cooling Riata (see CookeryClub Sauces and Dips).

Preparation time: 15 - 20 minutes   Quantity: Serves 6 -12   Cooking time: 15 - 30 minutes

Ingredients

250g plain flour- sieved
1-teaspoon ground cumin
1-tablespoon onion seeds
1-teaspoon black mustard seeds
1-teaspoon ground cumin
1 minced green chilli
1/2-teaspoon turmeric
1/2-teaspoon salt
250ml/9fl oz cold water
2 whipped egg whites
400g peeled medium potatoes

Method

  • In a large bowl add the flour, chilli and spices
  • Whisk in the water gradually to form a smooth batter, the consistency of double cream
  • If to thick add more water if too thin add a little more flour
  • Spoon in the whipped egg white, gently as not to loose the air
  • Peel and slice the potatoes in to thin/1/4 inch slices
  • Dip in to the batter and deep fry till golden on both sides
