Aloo Gobi (Potatoes and Cauliflower)
Cooking time: 20 - 27 minutes
Ingredients
5 tablespoons of oil
3 medium potatoes cut into cubes
1 medium cauliflower florets (washed and dried)
1 fresh tomato
1 teaspoon cumin seeds
1/2 mustard seeds
1 medium onion chopped
1 flat teaspoon turmeric
1 flat teaspoon red chilli powder
1 1/2 heaped teaspoons cumin and coriander
1 flat teaspoon ginger
1 flat teaspoon garlic
1 1/2 teaspoons salt
1/2 teaspoons garam masala
Method
- Put oil in a large pan
- When hot add cumin, mustard seeds, onion, potatoes and cauliflower
- Cook for 2 minutes, then add turmeric, chilli powder, cumin and coriander, ginger, garlic and salt stirring occasionally (until cauliflower and potatoes are cooked, approximately 15-20 minutes)
- Sprinkle 1 flat teaspoon garam masala on top and stir
- Finally add fresh sliced tomato and fresh coriander to garnish
- Cook for a further 3-5 minutes uncovered
