Veggie Patties, Burgers or Balls

A simple mix full of flavour. Make pan fried pattie cakes of any size, Burgers to grill, pan-fry or B.B.Q or (sautéed) veggie balls to serve with spaghetti and tomato sauce or as part of a buffet to dip in to something hot and spicy.

Preparation time: 20 minutes approximately   Quantity: Serves 20 - 50 see below   Cooking time: 10 minutes approximately

Ingredients

5 medium onions - peeled
6 cloves garlic - peeled
4 cm ginger
2 - 3 tablespoons olive oil
4 carrots - peeled
1 red chilli - sliced and seeds removed
6 tins chick peas (240g chick pea weight per tin) or equivalent dried, soaked and cooked
2 heaped teaspoons of turmeric, paprika and cumin
1 level teaspoon ground chilli
1/2 teaspoon ground black pepper and salt
3 tablespoons tahini paste
3 tablespoons fresh chopped herbs (of choice)
5 small - medium eggs (or 4 large)
300g / 10 oz bread crumbs (preferably home made dried wholemeal)

Method

  • In a processor whizz down all the onions, garlic and ginger until very finely chopped or chop by hand
  • Heat half the oil in a large pan
  • Gently fry of the onion mix, till soft but with out colour
  • Spoon in to a large bowl
  • Meanwhile process the carrots and chilli till finely chopped or grate by hand
  • Heat the rest of the oil in the same pan and cook of the carrot mix in the same way as the onions BUT when nearly soft
  • Turn up the heat and add all the spice and seasoning, stirring and cooking for a minute or so to cook out the spice adding more flavour
  • Add to the onion mix
  • Meanwhile process the drained washed chick peas (in several lots) - until mushed but with a little consistency
  • Add to the onion and carrot mix
  • Mix the tahini in by hand, spreading the tahini in to the mix
  • Add everything else and mix well
  • With damp hands mould in to patties, burgers or balls or use a burger machine (a plastic gadget usually around a fiver from good and bad! cook shops)
  • This mix will make approx. 26 x 4 oz/ 100g burgers or 50 small patties or 2 oz burgers or 20 whopper ones or 80 - 100 balls
  • The mix will keep in the fridge for several days
  • Freeze left over mix for another day
