Chicken Fajitas
Replace the chicken for strips of turkey, pork or steak like trimmed rump or sirloin.
Serve in a big bowl with a plate of tortillas and a bowl or two of Mexican dips. For a bit more cook of some garlic jacket wedges.

Ingredients
3 - 4 large chicken breasts
3 onion - sliced
3 red pepper - sliced
2 tablespoon olive oil
1/2 red chilli - finely sliced (op)
2 - 3 clove garlic – crushed
1 teaspoon paprika
1 teaspoon ground cumin
1 fresh lime juice
seasoning
1 tablespoon coriander - chopped
2 - 3 floured tortillas each
Salsa, sour cream and / or guacamole
Method
- Slice the chicken, the onion and the pepper
- Heat the oil in a frying pan
- Stir-fry the chicken till sealed/ light brown all around
- Add the onions and cook without colour till soft on a lower flame
- Add the peppers, spice, chilli and garlic
- Cook till semi-soft for 3-5 minutes and the chicken is firm and cooked
- Squeeze on the lime and season
- Sprinkle on the coriander
- Serve in a sizzling fajita or in a separate dish, with a plate of tortillas, salsa, sour cream and guacamole
