Green Chicken Curry
A 30 minute dish, for a variation use raw king prawns.

Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 20 minutes
Ingredients
2 tablespoons vegetable oil
1 tablespoon (heaped) green curry paste
2 x 350 - 400g chicken breasts
1/2 tin/ 200 ml coconut milk
2 tablespoons chicken stock or water
2 teaspoons nam pla/ fish sauce
1/2 fresh lime juice
6-8 leaves Thai basil
Method
- Fry the curry paste in the hot oil for a minute or so
- Add the diced chicken, cook till sealed (white/golden all over)
- Pour in the coconut milk and stock
- Simmer for 8-12 minutes till the chicken is firm and cooked
- Add the nam pla and the torn basil leaves
- Squeeze in the lime and serve
