This is a cheaper Brownie recipe as its flavoured with cocoa and not chocolate, good for bulk cooking - the brownie comes out more cake like, but is still good hot, warm or cold.
You can omit the nuts if you like - I do.

Preparation time: 20 minutes   Quantity: Makes 15-20 squares   Cooking time: 35-45 minutes

Ingredients

300g/ 10 oz plain flour-sifted
420g/ 14 oz dark or light brown sugar
100g/ 4 oz cocoa powder
240g/ 8 oz butter- softened
4 medium eggs
1 teaspoon vanilla extract
1 tablespoon milk
2 teaspoons dark rum (optional)
300g/ 10 oz nuts i.e.-broken walnuts, sliced almonds. chopped pecans, grated coconut or chopped brazil nuts-or mixed

Method

  • Beat everything together till well mixed
  • Spoon in to a greased edged tray or loaf tin
  • Bake in a preheated oven gas 6/200*c on the middle shelf for 30-45 minutes-till firm and cooked
