Cajun Dirty Rice
Dirty due to its dirty colour, but don’t let that put you off its a great tasting rice dish, meaty, filling, spiced and just darn delicious
Preparation time: 10 minutes Quantity: Serves 6 - 8 Cooking time: 30 minutes
Ingredients
2 tablespoons oil
2 onions - peeled and small diced
3 cloves garlic - sliced
3 sticks celery - small diced
2 green peppers - de-seeded and small diced
100g / 4 oz chicken livers - trimmed and chopped
200g / 8 oz minced pork
1 red chilli - finely sliced (or half)
3 teaspoons Cajun spice
450g / 16 oz American easy cook rice
1&1/2 pints / 750 ml chicken stock
Method
- Heat the oil in a large saucepan
- Add the onion and cook till golden brown
- Add the garlic, celery and peppers
- Cook for a minute and then
- Add the chopped livers, cooking till sealed (brown on all sides)
- Add the minced pork and cook till sealed, stirring round and breaking up any lumps
- Add the chilli , Cajun spice and rice, stirring for a minute to coat all the grains in flavour
- Pour over the stock or water and a stock cube and bring to the boil
- Simmer for 15 - 20 minutes or until the rice is tender and the stock absorbed
- Taste to season
- Serve as a main course or as a side dish
