Cabbage with Smoked Bacon

A simple dish of cabbage and smoked bacon which works well with Pork or pan-fried Fish.

Preparation time: 5 minutes   Quantity: Serves 4   Cooking time: 10-12 minutes

Ingredients

1/2 green cabbage - kale or savoy
2 finely shredded /stripped slices of smoked butchers bacon, thick cut
1 tablespoon olive oil
60g/ 2 oz butter
seasoning

Method

  • Shred the cabbage finely and wash well
  • Sauté the bacon in the hot oil and 1/2 oz butter until crispy and golden
  • Add the rest of the butter followed by the cabbage
  • Stir for a minutes till wilted
  • Add 2 tablespoons of water and cook till soft approx. 4-5 minutes
  • Season to taste and serve
