Herb Baked Courgettes

These cheese, herby baked courgettes are a real treat whether you eat them as a vegetarian main course served with a fresh tomato sauce or whether you eat them as a side dish with a marinated grilled lamb steak.

Preparation time: 20 minutes   Quantity: Serves 4   Cooking time: 35 minutes

Ingredients

4 large courgettes
1 tablespoon oil
seasoning
30g/ 1 oz butter
2 clove garlic -crushed
1 teaspoon chives -chopped
1 teaspoon fresh thyme -chopped
1 tablespoon parsley -chopped
90g / 3 oz breadcrumbs
90g / 3 oz gruyere cheese -grated
seasoning

Method

  • Cut the courgettes lengthwise, score the flesh
  • Drizzle with the oil and season
  • Bake in a hot oven for 20 minutes
  • Meanwhile heat the butter and gently sauté the garlic
  • Add the herbs and crumbs
  • Cook for a few minutes to intensify taste
  • Take of the heat
  • Stir in the cheese and season
  • Scoop out the flesh of the par-cooked courgettes, leaving a solid courgette skin to re-stuff
  • Chop the flesh and add to the crumb mix
  • Place the courgette halves flesh side up in an ovenproof dish
  • Spoon the crumb mix in to the centres
  • Bake in a hot oven for 15 minutes
  • Serve
