Use large to medium potatoes, try Maris Piper or King Edward's. Of course chips are not healthy but I always make a big batch on Boxing Day to have with the cold turkey - can’t wait!!!

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: 12 minutes per batch

Ingredients

1 kg/ 2 lb. potatoes
vegetable oil for frying
salt and malt vinegar

Method

  • Peel the potatoes
  • Cut in to 3/4 -1 cm thick long - chips
  • Wash in cold water to remove some of the starch
  • Drain well
  • Fry in a deep fat fryer, preheated at 130*c
  • You may have to fry in 2 batches depending on fryer size - don’t over fill, they need room to
  • Fry with the odd shake till soft, without much colour approx. 5-6 minutes
  • Take out and shake of excess oil
  • Turn the fryer up to 190-200*c and allow to reach heating point
  • Refry till golden and soft
  • Shake of excess oil
  • Shake on to kitchen paper to remove excess oil
  • Sprinkle with salt and malt vinegar and serve
