Curried Potatoes
A really easy side dish to go with a good CookeryClub Curry or to serve with chapattis and chutney - we’ve got that recipe too!
Preparation time: 10 minutes Quantity: Serves 2 for a main course or 4 for a side dish Cooking time: 10-20 minutes
Ingredients
1 tablespoon oil
400g/12oz diced cooked potatoes
1 finely diced onion
1 clove garlic -crushed
1 teaspoon each of chilli power, ground cumin, ground corriander and tumeric (or 1 level tablespoon curry paste)
2 tablespoons set yoghurt
touch water
seasoning
1 tablespoon chopped corriander (optional)
1 teaspoon garam masala (optional)
Method
- Heat up the oil, sauté the onion till soft but without colour
- Add all the spices or paste, cook for a minute to release all the flavour
- Add the cooked potatoes and garlic
- Add a few tablespoons of water or stock to help from drying out
- Stir in the yogurt and season
- Serve with chopped corriander and a sprinkling of garam masala
