Cheesy Mash
Preparation time: 10-15 minutes Quantity: Serves 3 - 4 or a topping for 6 portion Shepherds Pie Cooking time: 35 - 45 minutes
Ingredients
2 lb/1k of large un-waxy potatoes
2-3 tablespoons of Greek yogurt
1/4 pint milk
salt and pepper
2 oz / 60g grated mature cheese
Method
- Peel and wash potatoes
- Cut them in to 3-4 smaller pieces
- Cover in a pan with cold salted water.
- Bring to the boil and simmer till just soft 35- 45 minutes
- Strain off all the water and put the dried potatoes back on to a low heat, warm through and add milk bring to a bubble and turn of the heat
- Mash and season well – add Greek yoghurt to make them creamier
- Stir in cheese, spoon in to a dish and top with more grated cheese
- Grill until melted and golden
