Fruity Curried Rice

You can add any other fruit you fancy i.e. – mango, pineapple, orange, kiwi etc

Preparation time: 10 minutes   Quantity: Serves 2  

Ingredients

100g/ 4 oz raw weight - cooked rice
1 teaspoon curry paste
2 tablespoons yogurt
½ diced apple
1 tablespoon raisins
2 spring onions sliced (or ¼ small white onion)
seasoning

Method

  • Mix together cooked rice, curry paste mixed with yogurt ,diced apple,raisins,spring onions
  • Season and serve
