Hastleback Potatoes
Serve as an alternative to roast potato, as these are roasted with the added bonus of a criss cross top, which allows the oil to seep in, making them crispy with a hedgehog golden brown design when cooked.
Preparation time: 10 minutes Quantity: Serves 4 - 6 Cooking time: 30 - 40 minutes
Ingredients
1&½ lb / 600g medium potatoes
3 tablespoon olive oil

Method
- Peel and wash potatoes, cut in to ½’s– roast potato size (approx 3 –4 per person)
- Slit the rounded side with a sharp knife going down by ½ from the bottom one way and then the other to achieve criss cross markings over the top
- Soak for 5 minutes in cold water to wash out the starch
- Dry well
- Place in a bowl add olive oil tossing to coat each potato and season well
- Place spread out on a non-stick tray and roast in the oven for 30-40 minutes till fanned out golden and crispy
