Charred Aubergines

Try making an assortment of grilled or charred vegetables like courgettes, asparagus, tomatoes, red onions and peppers. Serve with simple grilled meats or baked fish or make in to a hot sandwich between layers of lightly grilled ciabatta or paninis.

Preparation time: 5 minutes   Quantity: Serves 2 - 3   Cooking time: 10-15 minutes

Ingredients

1 aubergine
2 tablespoons olive oil
salt and pepper

Method

  • Top and tail the aubergine, cut into ½ inch slices
  • Brush both sides with olive oil and season char grill, B.B.Q
  • Grill or pan fry each side till golden brown and soft
