Chilli Coleslaw

Cabbage is a super food, onions good for the blood, Carrots full of Betacaroteen, chillies raise metabolism - so together a Zingy little Healthy number. Perfect served with B.B.Q Foods or slow cooked ribs.

Preparation time: 20 minutes   Quantity: Serves 8  

Ingredients

1 white cabbage (approx. 1lb/500g) - shredded
1 white onion- thinly sliced
1 large carrot- finely stripped.
1 large fresh red chilli- finely stripped
2 tablespoons mayonnaise
3 tablespoons Greek yogurt
1/2 lemon juice
5-6 twists freshly ground black pepper

A touch of salt just before service

Method

  • Bind the mayonnaise and the yogurt in to the sliced prepared vegetables, season with lemon and black pepper
  • Salt draws out the water in the salad- so only salt if your going to serve soon-ish
