Indonesian Coconut Rice - Nasi Lemak
You can use the same method to make Sweet Pudding Rice, by omitting the lime, seasoning and ginger and adding honey or sugar, sultanas, pistachios and a touch of spice.
Preparation time: 15 minutes Quantity: Serves 4 Cooking time: 30 minutes
Ingredients
200g/ 8 oz Thai rice
1 tin/ 400 ml coconut milk
3 thin slices of ginger-skin on
4 kaffir lime leaves
seasoning
enough water to cover
Method
- Soak the rice, leave for 5 or so minutes and drain and rinse
- Repeat 3 times
- In a pan add the rice, coconut milk,ginger, lime leaves and seasoning
- Add enough water to cover the rice by 1/2 inch
- Bring to the boil, cover with a lid and simmer for 10 minutes
- Turn of the heat and leave
- Stir after 15-20 minutes and serve
